Winemaking

The 2006 Pinot Noir was fermented in many small (1 to 2 ton) fermentors, some with a small amount of whole clusters. The grapes were put in the open top tanks via gravity, after hand sorting. The must was punched down as much as 6-7 times per day. All wines were fermented with natural yeasts for about 7 days, after a 5 day cold soak. After pressing at dryness, the wine was put in barrels by gravity for an 11 month barrel aging in Burgundian French oak barrels.

Tasting Notes

When we purchased the Pillow Road vineyard, we had many tastings of other Pinots to talk about wine style. We all agreed that it was important to not make a Pinot that tastes like a Cabernet, our term being "no Pinot Sauvignon. So we talked about elegance and silky tannins, balanced acidity, fresh red fruit aromas, complexity and soft rich, mouth watering flavors. All nice talk.knowing full well that the vineyard is mostly in control of the wine style. Needless to say, we were all pleased to see that the 2006 Pillow Rd Pinot Noir has all of our wish list and much more.
